Summer is here and we are ready for some BBQ parties. What better way to get your BBQ started than with some simple BBQ recipes? We have put together our top 3 favourite easy BBQ recipes that we think you will love!
Recipe 1: Halloumi kebabs- BBQ Recipes
- 2 medium courgettes
- 1 large red onion
- 250g low fat halloumi cheese , cut into 16 chunks
- 16 cherry tomatoes or mushrooms
- 1 tbsp olive oil
- 2 tbsp lemon juice
- 2 tsp fresh thyme leaves
- 1 tsp Dijon mustard
Step 1- The kebab
Firstly, cut the 2 courgettes in half lengthways and slice into thick strips. Next, cut the onion into large chunks, similar to the size of your courgette strips. Then, add both the onion and courgette chunks on to your skewer along with the halloumi cheese chunks and tomatoes or mushrooms, whichever you choose! Once you have added the chunks on to your skewers (you should be able to have 8 fully loaded skewers,) you can cover and place them in the fridge whilst you create the lemon baste.
Step 2- The lemon baste
To create the lemon baste, simply together the olive oil, lemon juice, fresh thyme leaves and Dijon mustard. The baste and kebab can be store in the fridge for up to half a day before the BBQ to get all of your prep out of the way in advance.
Step 3- Get it on the BBQ!
Finally, place the kebabs on the BBQ and brush on the lemon baste. Make sure that the baste is fully mixed together by giving it a stir before brushing it on to the kebab. Keep the kebabs on the BBQ for around 4 to 5 minutes until the halloumi is golden. Once the halloumi is golden and the veg is soft, you are ready to plate up!
Recipe 2: Ginger beer- BBQ Recipes
- 200g ginger
- 2 large lemons
- 75g golden caster sugar
- 100g light brown muscovado sugar
- 1 litre soda or sparkling water
Firstly, cut the ginger into thick slices and peel and juice 2 lemons. Next, put the ginger, lemon peels, golden sugar, caster sugar and 500ml of water into a saucepan over a low heat. Once you have added all the ingredients, stir until the sugar is fully dissolved. Following this, increase the heat to a medium heat until the contents of the pan becomes syrupy, then leave to cool.
Once the syrup has cooled, use a sieve lined with a muslin to strain the syrup into a jug or tub. You can keep this syrup in the fridge for up to two weeks!
Finally, fill a jug with ice and pour in the syrup along with the squeezed lemon juice. Fill up the rest of the jug with some sparkling water or some soda, whichever you prefer! Serve garnished with a slice of lemon, perfect for a hot day!
Recipe 3: BBQ rum & caramel bananas
- 50g softened butter
- 40g light brown muscovado sugar
- 1-2 tsp treacle
- 1-2 tbsp spiced rum
- 6 unpeeled bananas
- Ice cream
Firstly, mix the treacle, butter and the rum together. Make a slice through the bananas on the inside of the curve, making sure not to go all the way through. Once you have created a slice in your bananas, add a spoonful of the butter, treacle and rum mixture into the slice.
Next, place the bananas with the mixture inside onto foil with the curved size up. This will prevent the mixture from spilling everywhere. Make sure that the foil is large enough to wrap up the banana fully.
Finally, cover the bananas with the foil and make them into parcels, making sure to fully cover the banana. Place the parcels on to your BBQ for around 15 minutes, whilst making sure to turn them at least once. The bananas will be ready once they are caramelised and sticky. Add some ice-cream or pancakes on the side to complete the desert!
